I consider the colors and contrast equivalent between the 7D and the 5D2, but I shoot RAW in both cases and always adjust to taste. I "expose right" to the right of the historgram, so my out-of-camera jpegs always look washed out and I use them only for preview. In RAW conversion I get everythig where I want it and then convert.
