I know two things, I want to generally ETTR, which means that I generally need +EV, but I also adjust for my subject when the meter can't handle it, like a white subject in a neutral background or dark background.
I understand using manual in a controlled lighting situation, like with a model. I use it for multi-shot panoramas, lightning shots and other situations where I don't want the meter to change exposure from shot to shot. Otherwise, I'm in Av.

just a personal preference thing. Just like how I chose a manual transmission, yes these DTC transmissions are now many times faster then a manual, but there's just something about having complete control over everything that just makes it better. For some people.
