A seared juicy steak is great, but its different. Kind of like how you can cook a potato ten different ways.

I have no grill, i live in an apartment and we cant have them on our patios!!

so back to my question, can i use a non stick frying pan instead of a iron skillet?

NEIN!!

Cast iron is oven proof; a non stick pan is not. (Unless it says it is oven safe, but it seems like a bad idea.)

Cast iron skillet was the second purchase I made for my food prep...after my grill (which has cast iron grills!)

Once seasoned properly....mmmmm!

lol some guy actually rolled up once to the fairfax meet, popped open his hood and took out his dinner it was wrapped in foil.

yo do you do your own work on you 7? have you ever been to the place near dulles where you do it yourself?

A place when i can work on my 7? Explain.

I do most of the work in my garage or i use my friends lift at Audi dealer in Rockville.

Peter Luger, wolfgang, striphouse... they all cool their steak by

1) rubbing it with olive oil
2) seasons with salt and pepper
3) use a broiler and char both side to crisp
4) and cook it with a lower temperature til desire temperature
5) let the meat sit for 3 - 5 minutes
6) slice the meat off the bone and serve...

You shouldn't, with the heat you need to get the pan for a good sear, you can actually get the teflon to breakdown into your food in all but the most high end cookwear..

Go to the sporting goods store like Academy or something that has an outdoor section and get a seasoned pan, only like $25..

However the all time best "Apartment" solution to cooking perfect steaks is this.. And before anyone laughs, I also have a 1000deg infrared grill as well, and this thing turns out steaks better than most of the people you know can make in about half the time..

You're using the wrong oil if you are having smoke issues. Stop using Extra Virgin to cook with smoke point is too low in first press oils. Extra light olive or canola is your best bet. Some like the flavor of grape seed oil as well, but I am not a fan... Right oil = much less smoke and you don't look like a no talent chef in your own kitchen..
