What does this delay valve actually do?

The stock CDV has a small orifice that prevents the clutch from engaging too fast. Aftermarket ones allow full fluid flow and convert the clutch system to a standard hydraulic clutch that feels like it should, but you have an increased risk of shocking the transmission/driveline if you don't rev match properly and are in the habit of releasing the clutch quickly (as you should, except when starting from a dead stop)
